Mexican/Southwestern Southeast Asian Cajun/Creole Pork BBQ, eastern NC style Low Country (eg Charleston SC) All of these are hot climate foods so that's why I pick them for this festival at this location/season; there're plenty of other food styles I would want elsewhere. But then I also add Italian for the pasta--nothing makes a better base for the drinking. I'd also like to see simple foods sold in smaller quantities for a smaller price--basic sandwiches, hot dogs, etc. The trend is to make them huge, fancy and expensive--a big Panini sandwich with sprouts and aioli, at $8, for example--when I'd just a soon have a turkey and cheese or BLT w/ mayo on wheat sliced bread for $4. (If you call the mayo "aioli" you get to charge more. And since both bacon and pizza "goes without saying" I'm not saying; of course they're on the list. At Hornings 2010 String Cheese Incident there was a vendor that change the menu constantly. He would offer just a few choices. Both meat and veggie entrees. One day for lunch he had roasted lamb sandwich with a horseradish sauce and pickled red onions. One night after the show he had prime rib, baked potato and salad.
Variety is my wish list. Anticipating what may be on today's menu is much better than what fried crap to eat today.

I would like to see some good country breakfast items late night and in the mornings.
Think biscuits and gravy or pancakes and eggs, and of course bacon and sausage.
I am a sucker for breakfast foods anytime of the day.

hot dogs off a cart like in NYC. Not fancy, just kraut and mustard. I could eat a few any time of day. Cheap, too.

Being in SVIP they feed us pretty good. But I like to look around because I like some of the festival food. They really did had a lot to offer on the festival grounds. Hate to not have some junk food, screws with my system.

There was a vendor at Floyd last year who sold a big plate of cheesy scrambled eggs for $3 and a cup of drinkable coffee for a dollar. Unfortunately she was not at Lockn last year, but one can hope.I would like to see some good country breakfast items late night and in the mornings.

I usually cook at camp (Jambalaya in da house!), but when at the stages all day it's nice to have a variety to choose from.
