A cookout is an outside party my sister in NC attends You need to be more specific. There are 3 types of Carolina BBQ. (1) Eastern NC - a vinegar based sauce (my personal favorite) (2) Western NC - vinegar based but with tomato also (3) South Carolina - a mustard based sauce. I went to college in Winston-Salem and the Triad area is generally considered the demarcation point between Eastern and Western NC with Lexington as ground zero. I know Pearce's well. It's been several years, but always used to hit it up during Dead runs at Hampton. I too mostly cook butts. A good dry rub on a smoker for 3 seasons (seriously considering adding a ceramic grill to my other 6 grills) . In the dead of winter I use a crock pot and liquid smoke. I know to some that is heresy, but 8 hours in the cold is too much for this old guy. And sometimes I just want my damned chopped Q. Will have to bring some Q to Lockn' this year. I'm the primary cook for our crew (growing up in the restaurant business will do that to a guy) and want good stuff that can be heated/cooked quickly (especially if there is no Wilco dinnertime set). My rig at L2 Thanks. I had a card table (trash picked, of course) I contributed to the beer exchange; it was too big for my space anyway. The next year I had a narrow folding table--also trash picked, of course. Okay. First of all, you gotta realize there are two Pennsylvanias. Western PA is practically a whole different state. They have their own culture, their own language, their own beer, and even a different type of coal. Not kidding about any of that. They put the fries and cole slaw right on the sandwich and even put fries on their salad. Good folks, but definitely different. 
While I'm under no illusion that any BBQ one could find ANYWHERE in PA remotely compares with NC, even keeping in mind that I don't even like Carolina BBQ, I can assure you that we know the difference between grilled food and BBQ. We get the Food Network, for crissakes.

I'm from Philly and almost everyone I know says "we're throwing a barbecue", even if it's just burgers and hot dogs. I know this is blasphemy in the south, but seeing as I don't live there I'll continue with my definition.
Likewise, if people are promised "barbecue" and are served grilled burgers and steaks, I'd expect some fair outrage! 
From Michigan here, we use the term Barbeque if it involves grilling meat.

I started cooking pigs while in school in Lexington, Virginia, but learned a lot from friends and visits in Lexington, NC. And their roadside BBQ was always the best. I agree, it is ground zero.

BTW my sister always is serving a supply of her home-made BBQ at Lockn, so find your way to her RV.

try cold smoking it all day then finish in the crock pot/oven/dutch oven. You can leave out the liquid smoke, it pulls apart nicely, and cold smoking doesn't require any attention to temps, the fire can go out, it's fool proof for most fools.

I've had that Alabama white sauce before. It took me by surprise when we stopped at a BBQ joint near Pell City probably 25 years ago. I had never heard of it before. I've only had it with chicken and I think that is the main use for it. Good stuff. Not a HUGE fan of the SC mustard sauce. I've had really good versions and I've had some that were an abomination. When we first moved to NC we went for BBQ and were really puzzled because we'd never seen Eastern NC BBQ. We thought they had forgotten the sauce. I do love the Lexington BBQ and the red slaw that usually comes with it.
One of our crew is a butt smoker and this year I think we are just going to go with pulled pork and mac & cheese for lunch/mid day/whenever. A glob of each in a red solo cup, mix together and get happy.

That's my new plan: smoke a butt before Lockn' and bring it. Then just need to quickly heat it (now if there's that Wilco dinner prep set, I will be at the grill). Still plan on cooking pork chops with a bacon-molasses rub, some black rice, and cheesy broccoli one night.

We are old farts and therefore are RVers. I might just decide to use THAT microwave. Now some good old fashioned engine block cooking is a whole 'nother story.Heat it up in a Carolina microwave: park facing south and leave your food on the dashboard for a couple of hours.

There's engine block cooking, and I've heard of boaters steaming seafood with engine water discharge, too. And RV'ers doing laundry by driving around with dirty clothes in a bucket of water and detergent.
But as for BBQ, it needs to be reheated in cast iron. Besides, iron in your diet is more important than radioactive particles.

I like shepherd's pie, and cannot abide boiled peanuts either (usually called "bull peanuts"). Look at the teeth of the people selling them by the wayside; that's all you need. My Carolina-bred wife likes them. Yuck.

A friend had surgery and was ordered off his feet for nothing but bed/couch rest for a week. So we all took turns supplying dinner and some lunches while he mended. So I made my version of arroz con pollo. I make it in an unglazed clay pot and the rice on the bottom and sides gets crispy. I use thighs (I screwed up and didn't realize they were boneless) and both sweet Italian and chorizo sausage. It is pretty badass. I threw together a salad of mixed baby greens, heirloom rainbow mix cherry tomatoes, shaved mushrooms and shaved Parmesan with a light white balsamic and chive dressing. Served it with some warm whole clove garlic bread and a bottle of 2013 Tikal Patriota.
