What is the best way to store meat for camping? If I buy my food and prepare everything and take it out of the fridge Wednesday night and place it in a cooler, what method will keep my food fresh (not spoiled at the very least) until the weekend?

Freeze it after you prepare it at home. I’ve done this with meat and veggies. Works great. Dethaw hours before then and reheat! So easy. What is the best way to store meat for camping? check out the cooler tips thread for lots of suggestions, including pre-cooling the cooler itself. Cooked sealed food lasts well, even better if frozen so it serves as an ice block.
Consume your food in order of perishable--chicken salad first; salami last.
when you reheat your food be sure it is thoroughly heated through. A microwave generally does NOT do this.
Using small coolers works best--have one with the most perishable and concentrate on keeping it coldest and more important, closed all the time. Produce, juice, etc is not as essential to keep cold so you can let it ride--and is why you have it in a seperate cooler.
Then put drinks in their own cooler since it's opened and closed the most.
always put a layer of newspaper on top of the cooler contents, especially if it's not full or the top is cheap--many don't have any insulation at all.

This is all subject to what you are cooking and the type of cooler you own. My Igloo holds between 6 and 7 gallons so we buy the pre-pattied burgers that are sealed in the plastic so they can actually be submerged into the ice/water without leaking juices all over the place. The type of food we buy we also cook all at once so we're never putting something back into the cooler that has already been opened. I did bacon and eggs one year and just put the eggs on top of the ice and they held all 4 days no problem. I have never made chicken salad or anything like that though but may try it this year for yummy sammaches because of these guys suggestions!

I do a big tub full of tuna salad every year. The second cooler is a good tip. I also fill some reusable plastic containers with water and freeze them, so I have some block ice for the food cooler. Lasts a lot longer. The secret to 5-day tuna salad staying fresh is the pickled sweet cubes.
If you like to bring eggyweggs these containers are a must-have. Very handy.

I use a food saver vacuum sealer for lots of stuff. Great for camping trips. I've got a bunch of flat iron steaks for carne asada and some brats that I'm about to vacuum seal and freeze just for Lockn'. They will thaw out in the cooler but they will stay good for a long time. Bonus is that there is no chance that they will leak meat juice into the cooler and contaminate everything.
By the way, I found the food saver on a pre Christmas sale for less than half price directly on the food saver website. Way better deal than Amazon or anywhere else I found.
