Use the cold weather to cold smoke while you can--cheese, nuts, cured meats incl. store-bought sausages, fish; make jerky. You can cold smoke now and freeze/refrigerate to cook through later.

Made this the other day. It's a Greek dip/sauce called skordalia. It's garlic to the garlic. Traditional northern Greek recipe I use has garlic, walnuts, bread, white wine vinegar, olive oil, and salt. Southern Greeks use potatoes as the starch and often omit the walnuts.
This is so good. It's creamy and garlicy. Like kill a vampire from a mile away garlic. Social distancing food. Use pita chips to dip, spread on bread and leftover lamb for a sublime sandwich, or just use your finger (don't judge).

Not to be too much of a pain in the ass, but how much of each ingredient? This is something I would really like to get after....Or, can you direct me to the exact recipe online? I use the northern Greek version with walnuts and bread. However in this batch, I inadvertently added about triple the amount of garlic (now I usually go a little heavy on it, but this was overpowering). I didn't have another loaf of bread in house (I usually buy a loaf or two of cheaper bread and freeze it to use) so I decided to do a mash up. Basically it's the first one with the potatoes from the second added. I'm sticking with this in the future as the bread and potatoes together worked really well. This cookbook is the real deal. It's the Greek Orthodox Church YiaYais (grandmothers). Shout out to the one that use the mortar and pestle. Don't mess with those YiaYias.

I didn't know you were Greek, hondo.
Cincinnati chili has Greek-American origins, you know. This was my first time making it without a commercial spice packet. I basically used the spices/herbs I always do for chili and added a little cinnamon, cocoa, nutmeg and allspice. I was surprised by how close I got it, considering I was flying by the seat of my pants.

About as Greek as you can get. Mom, dad, and older sister off-the-boat Greek. Then they ran a restaurant in Harrisonburg VA for 30+ years before retirement. A Greek running a restaurant, I know that never happens.I didn't know you were Greek, hondo.

Your spice mix sound right. I use recipes as suggestions and adjust based on what's on hand and tasting along the way to get th right flavor profile.
And I love Cincinnati chili. A local place called Hard Times Cafe rocks it.
