I give you: shrimp w. mixed vegetables and brown rice.
With the rice mixed in, bagged and ready to be frozen, and then boiled in bag at camp.

1 pound sausage
6 eggs
1 C milk
1 tsp dry mustard
1 tsp salt
1 1/2 C shredded cheddar
4 slices white bread
Brown sausage into crumbles and drain all grease
Grease bottom of rectangular cassarol pan
Cut bread into cubes, line bottom of cass. dish with bread
Spinkle sausage all across bread
Sprinkle cheese all across sausage
Beat eggs until mixed
Add milk, mustard, salt - mix again
Pour carefully over cass.
Fridge OVERNIGHT
Bake next day 350 degrees, 45 mins or so...
Cool, return to fridge and get cold. Cut into serving sizes and freeze. Can microwave it or crumble it up into a frying pan and reheat until hot!

Ready for Guacn'! I had to use avocado purée, because I got a good deal on more than I could use last week and had to freeze some. So it's not as chunky as I would like. Hope with all the lime juice and packed in a vacuum bag it'll last 'til the fest. Sue doesn't like cilantro, so it has a secret ingredient instead. You should stop by and try some!

Did my summer festival/camping test run of tamales this weekend. If you are trying to think of a food to cook ahead of a festival I'd highly recommend exploring steamed tamales: easy to make en masse, delicious cold or hot, easily shareable with your neighbors, vegetarian or carnivorous, easy to seal in a zip lock and float in the cooler, naturally full of everything you need to keep you fueled, corn husk wrapping means biodegradable packaging is going into the trash.
Tamales and a bottle of hot sauce can sustain you for several days.

3.5 cups of Masa Harina
.5 cup of corn meal
2 1/4 tsp of baking powder
3/4 cup of shorting (instead of lard)
3.5-4 cups to feel of mealy consistency without being too wet of a blend of chicken, beef, and veggie stock
Add 1 TBLS of salt, and a 1/4 cup of brown sugar to stocks and heat to disolve and let cool down to warm.
Couple shakes of cumin, curry, chili, smoked paprika, and ancho
2 packages of corn husks - don't forget to soak them for at least an hour before filling them.
Make the filling, starting applying to the corn husks...you can also add cooked meat (like pulled pork, ground turkey, shredded chicken), cooked veggies (corn, onion, peppers, and mushrooms all excellent - be sure to drain excess liquid), or funky cheese (goat cheese with jalapenos is awesome). I skip tying them, and just ensure the folded bottoms are facing down on a steaming basket and stacked so that the open face is staring at you when you look into the pot.
Get fancy and make salsa verde with tomatillos. Or just a bottle of chalula.
