Starting to think about putting together my menu for Lockn' and I thought it would be a good idea to share some of our favorites to create a source of inspiration.

Here' one of ours...

Grilled mozzarella, roasted red peppers, basil and portabella mushroom sandwiches. Served with a side of your favorite chips, pickles, and melon.

I like to use sourdough, some fresh mozzarella, fresh basil and good quality peppers from a jar. I prepare the mushrooms ahead of time by slicing them about 1/2 inch thick and sauteing them in garlic and olive oil. Put them in a container and place in cooler until it's time to make the sandwiches. When it's time to assemble the sandwiches put a touch of balsamic on them and cook them in some butter mixed with some finely chopped fresh garlic and parsely. You can chop up the garlic and herbs ahead of time and put in a small container to make it easier. Easy and delicious!

Cook your grilled cheese sandwiches in the cast iron pan; put some bacon in the sandwiches. Even a bag of quality bacon bits can do; they can be refried in the cast iron pan too.

and all you have to do is wipe out the pan with a paper towel (assuming it's an old well seasoned one). It's also good, heated dry, for heating your tortillas/wraps for whatever you roll up.

Trader Joes has awesome super spicy frozen hashbrowns that are frying pan compatible. Big hit at our Lockn and Floyd brekkies last year.

Wish I had the courage to bring my old small cast iron pan, it would be perfect. Im scared it may grow legs though.

I have been making some damn good meatballs in big batches and freezing in vaccum sealed bags. The thawed ones taste as good or better than the fresh. Think I will bring some to try at lockn this year.

Recipe available if anyone is interested it's pretty vague though.

Worf likes to stir fry at festivals. He preps all the veggies in advance and seals them in one ziploc bag. Then he pre-cooks the rice or noodles in advance and puts that in another ziploc. Then the meat for that stir-fry goes in another ziploc. And all of these individual ziplocs go into one bigger ziploc bag in the cooler. Dump it into the wok and add heat and spices/sauces. Good to go!

We pre-cut big bags of vegetables (green peppers, onions, mushrooms, etc.) and just put them in the cooler They are versatile and go into a lot of things we cook.

We make breakfast burritos every morning. Eggs, vegetables above, sour cream, salsa, burrito shells. Quick and easy but very filling.

I can't remember what we did for lunch last year. It may have been sandwiches and snack food.

For dinners we did spaghetti one night, bean burgers one night, I think stir-fried rice one night.

Can't exactly remember. We packed way too much food, so we will be cutting down this year.

I took one of my favorite skillets last year and just made sure to lock it in our lock box after breakfast.

....or cured meats, coppa, pancetta, or prosciutto sliced paper thin. Same meats, with some aged provolone, and mixed olives works well for a nice tasty snack. We enjoyed a plate like this on Saturday night last year when they evacuated everyone. I think I may have mentioned before, but I really loved that break. Would have loved to see the rest of the Phil set, but it was nice going back to camp and having some drinks and snacks.

They held up very well. I was surprised the egg texture didn't break down from freezing. The trick is to let the ingredients cool down prior to wrapping them in the tortillas. And then, if you heat the tortillas so they're more pliable, just let the whole burrito cool down before freezing. From memory(which isn't always the best), I wrapped each burrito in wax paper and then froze them in zip locks. Also, I used eight inch tortillas which I think helped keep them from getting soggy when reheating. We tried wrapping them in foil when we first put them in the skillet, but it was taking too long, so we took off the foil. It helped to put a lid on the skillet so it had an oven effect. Just be sure to keep an eye on them and flip them so they don't burn. Besides not having to prepare anything in the morning, there's also very minimal clean up.

I dont mind making them fresh but cleanup can be a pain in a car camping situation.

A couple other suggestions for the precooked breakfast burritos....We went to a festival about a month prior to Lockn' and had a test run on our "make ahead" foods. That worked well as it gave us a chance to tweak the recipes or prep before Lockn' where we really didn't want to have to spend unnecessary time/efforts on food. After all, we were there for the music! Also, you may want to experiment with the burrito size. I figured about 1 egg/burrito. A six inch tortilla may be big enough and will heat quicker (less stuffing) than a larger one.

Someone at CID told me they too were inconvenienced by the primitive cell service last year so maybe it will get fixed this year. There was a pretty well equipped emergency center on grounds, though unreachable as they were.

last year's cell service failure was due to their putting up two towers on site, one for Verizon and not sure about the other--and they ended up blocking Verizon. Monday morning when they shut it down, Verizon worked perfectly.

But still, I never was told an emergency number to call. Obviously 911 is not the one. I never once saw any blue lights, tents, first aid stations or EMT's except the one coral where the cops hung out near the gate. The children working the entrances to VIP had no means to call their superiors nor did they know how. When one of their superiors came by, he also didn't know what to do.

So whether a fight, a medical emergency, or call about the destroyed bathrooms, there was no way to reach anyone.
