So I made a Trapo a few weeks ago. You were right; everyone in the house was mystified when I threw it in the living room fire, and everyone thought I was a rock star when I cracked it open. But then again, I was by myself. A couple of notes: treat yourself to a new dishrag or wash an old one a few times in just water. The tarragon fought with the Dawn flavor. The rag is right smoky when you pull it from the fire and you would want to open it outside, or disable the smoke alarms. I did 20 minutes exactly in a hot wood fire, turned once. My center was too rare (cool) even after I let it rest. However the outside had an overly well done circle, then medium well. IOW it didn't cook evenly. Steak houses avoid that by cooking frozen meat in a super hot oven; it cooks as it thaws and stays even throughout. Overall I think it's a fun way to cook but the end product is not as good as a carefully cooked T-loin. I wouldn't do it for Christmas dinner. It would be great at a fire pit. My daughter started an email recipe exchange that works like a chain letter. If you are so inclined, copy the text below, add a friend's name at slot one and your name at slot 2, and take off!
I like the way she suggests easy recipes. It will especially be useful for the youths who have never been so confined that they have to actually prepare food (and do dishes).
Going back to old times with a recipe exchange! As the world is social distancing right now, many of us are experimenting in our kitchens to help pass the time. So you have been invited to be a part of a #QuarantineCooking recipe exchange! Yay!
Please send a recipe to the person whose name is in position #1 (even if you don't know them) and it should be something quick, easy and without rare ingredients. Actually, the best one is the one you know in your head and can type right now. Don't agonize over it... It is the recipe you make when you are short on time.
After you've sent your recipe to the person in position #1 below (and only to that person), copy this email into a new email, move my name to the top and put your name in position #2. Only my and your name should show when you send your email. Send to 20 friends via BCC.
If you cannot do this within 5 days, let me know so it will be fair to those participating. You should receive 36 recipes. It's fun to see where they come from! Seldom does anyone drop out because we all need new ideas. The turnaround is fast, as there are only 2 names on the list and you only have to do this once.

For the ground lamb, I added dill and oregano along with the feta. Mixed it all together. My patties are half pounders. For the potatoes, I quarter them and line them up skin side down in a pan. Add some more dill and oregano, drizzle with olive oil. Add some water and olive oil to bottom of pan and bake. The taters get crispy on the outside and creamy on the inside. For the tzatziki, I used plain yogurt, peeled and shredded half a cuke. Added more dill and lemon zest and juice. Also added some dill relish.recipes please! I have some lamburger frozen and some cukes!
I cooked the potatoes at 350 for just over an hour. I grilled the burgers using a grill plate and my gas grill.
Plate it and growl at anyone that gets near it.

It would not be the same on a grill top. You don't have to trim it so close. Usually, if I am going to do a Trapo, I have the butcher trim it when I buy it.
When using the coals, there is not as much of smoke flavor. That is totally fine. It is just as delicious, just a tad different.
Chucking it into the fire place is a show stopper. I generally don't tell anyone whats going on during the party. Just walk over to the fireplace with my whiskey and toss it in. You should see people's faces. PRICELESS.

It is a fun and different way to cook. It has always been a fav for my wife and I. There are so many different ways to cook a T-loin, but I just love the smokey flavor and the salt crust from cooking it this way. It would not be the same on a grill top.

I'm trying to get better at finding Morels. I walk by far more than I find.

Morels take a special eye which you probably know. We don't have luck finding them, but some of our friends ...

Actually, those are scrambled eggs with sauteed ramps. Your egg salad guess sounds like a good idea. Another ramp use added to my rotation. The options are endless.Whadja mash em into egg salad? That sounds divine.

I have pickled ramps in the past. They are tasty, too, but probably not as good as your Grampa's leeks.

I've never tried hunting grouse, but I have seen a few over the years walking along the roadsides.
